Apple Pudding: My Grandma's Recipe

This has been a favorite recipe of mine since I was a child. It's very easy to throw together in 5 or 10 minutes and creates a wonderful fragrance while baking.  I reduced the original 1 cup of sugar to 3/4 cup, and it's just right.  I've never tried other fruit with this recipe but I think it would be wonderful with ripe peaches, bananas or blueberries.  It's delicious with whipped cream or vanilla ice cream.

Ingredients

1 egg, well-beaten
3/4 cup sugar
1/2 cup flour
1/2 tsp salt
1 tsp baking powder
1 cup chopped apples (1 medium to large apple should be enough)
1/2 cup nuts (optional)
1/2 tsp cinnamon (optional)

Mix dry ingredients. Stir in egg then fold in apples and nuts. Bake in a greased dish about 40 minutes at 350 degrees.
