Kid-Friendly Dinner: Ham, Green Beans & Potatoes

Ham, green beans and potatoes is a simple and easy hearty dish for cold days. Assemble it in a pot to simmer for 20-30 minutes, and dinner is done!

Ingredients

1.5-2 lb Ham Steak (Sugardale is a good brand)

2 16-oz bags frozen whole green beans

3 lbs red or white potatoes, unpeeled

1 large onion, sliced (optional)

Salt & pepper

Steps

  1. Remove ham steak from packaging and trim fat, skin and center bone.  Cut ham steak into individual serving sizes.
  2. Scrub potatoes and cut into chunks.
  3. Place potato chunks in one layer on the bottom of a Dutch oven pot on the stove.  Add 3 inches of water and a generous sprinkle of salt and black pepper. Lay ham pieces on top of potatoes in one layer.  Cover ham with all of the frozen green beans and sliced onion.
  4. Cover Dutch oven and bring to a simmer over medium heat.  Simmer for 20-30 minutes until potatoes are tender and green beans well-cooked.  (Allow beans to go past the crisp-tender, bright green stage and let them cook until they are soft.  They will have a wonderful flavor from the ham.)
  5. Serve in bowls with some broth and crusty bread.
