Berry-licious: This Easy Fruit Pizza Will Wow At Your Next BBQ

A heavenly cookie crust, cream cheese icing, and fresh fruit make this a dessert favorite

This Fruit Pizza has a heavenly cookie crust, a luscious cream cheese icing, and a medley of vibrant fruits. This no-fuss treat is a breeze to make and is easily customizable, allowing you to showcase your impressive dessert skills without breaking a sweat.

Fruit Pizza can go from kid-friendly to sophisticated.


Fruit Pizza

Ingredients:

For the pizza crust

  • 1 roll of pre-made sugar cookie dough 

You can also make your own, but this is supposed to be quick and easy!

For the icing

  • 8 oz. full-fat cream cheese (softened to room temperature for easy mixing)
  • 1/4 cup butter (softened to room temperature for easy mixing)
  • Dash of salt
  • 1 tsp vanilla
  • 1 1/4 cups confectioners sugar

Toppings

  • Sliced fruit 

We used a variety of berries, mango, peaches, and kiwi, but use whatever you have on hand or your family loves. 

Mom tip: To avoid a soggy pizza, don't use fruit that has a lot of water (such as watermelon), and assemble your pizza as close to serving time as possible.

Directions: 

1. Preheat the oven to the temperature suggested on the cookie dough package. 

2. Put parchment paper on a shallow baking sheet or pizza pan and roll out the dough to create a giant cookie. 

3. Follow the instructions on the cookie dough package to bake the cookie crust. You will likely need to add a few minutes to the baking time. The cookie crust is done when the edges start to turn light golden brown.

4. Remove the crust and let it cool completely.

5. Now it's time to make the icing: Combine the room-temperature cream cheese, butter, sugar, vanilla, and dash of salt. Mix.

6. Once your "crust" is completely cool, ice it.

7. Place your sliced fruit toppings on your pizza in any design you choose. Pat dry any fruit that is wet or moist (like the strawberries, kiwi and mango pictured below)
